Tonight’s Dinner: Tilapia, Roast Potatoes and Broccoli

Tilapia broiled with garlic, oregano, thyme, basil, salt and pepper. Finished with lemon juice. Garlic and onion roast potatoes and broccoli spears.

Tonight’s Dinner: vinha d’alhos (Portuguese in Hawai’i style)

Tonight’s Dinner: (Vinghra) Vinha D’alhos (Hawaiian style) chicken

This is a traditional Portuguese dish, slightly modified by the Portuguese living in Hawai’i. The original dish calls for wine but since that really wasn’t widely available in the late 1800s/early 1900s Hawai’i, they substituted vinegar instead. The pronunciation in local Portuguese dialect is vin-grah doy-sh (vinegar) instead of the Portugal Portuguese vin-ha (wine).

Vinha D’alhos

Ingredients:
3 lb boneless pork or chicken
1 1/2 cups vinegar
1 cup water
4 cloves garlic, crushed
6 Hawaiian red peppers, seeded and chopped (can substitute red chili flakes or coarse siracha peppers)
1 bay leaf
2 teaspoons salt
6 whole cloves
1/4 teaspoon thyme
1/8 teaspoon sage

Cut meat into 2 inch pieces. Combine vinegar, garlic, red pepper, bay leaf, salt, cloves, thyme and sage; pour over meat and simmer in a slow cooker or in dutch oven on low for several hours until soft then serve over rice.

Tonight’s Dinner: Fishie, fishie, fishie, fish….

Tonight’s dinner is Swai fillet, Thai garlic rice, Brussels sprouts. Swai is a type of shark catfish. It’s like basa but a bit coarser. Still, it’s a good fish.

The fish was grilled with seasoning, garlic and salt. Sprouts are just steamed. LOVE sprouts wiht some butter. Well faux butter.  And ah, the Thai garlic fried rice is pretty easy to make but you need fried garlic bits for it. Something easily grabbed at an Asian market. Fried garlic is GOD to cook with. I highly recommend it.

 

Tonight’s Dinner: Lau lau and rice

It’s raining cats, dogs and goats. So since it’s nearly like being home, we’re having lau lau tonight for dinner.

Tonight’s Dinner: Spinach Mushroom and Cheese Quiche with braised Asparagus.

This is actually a pretty easy dinner to toss together. There was fresh spinach on sale, fresh baby brown mushrooms and asparagus was 99¢ a lb. Since my baby sister Ren is coming down so we can leave for Frisco tomorrow, the fare tonight is Vegetarian. She’s actually a Carbatarian… one who doesn’t eat meat and hates veggies. I sneak them in all the time. 😀

I’m not big on adding cream to my quiche so I guess I should actually call it an Egg Pie but let’s face it… that just sounds odd. :::grins::::

Stir Fry Hamburger and Shitake Mushrooms

Tonight’s Dinner: Stir fry hamburger, shitake mushrooms, onions, garlic in Oyster sauce & shoyu. Over rice.

My writing partner today. She was totally unhelpful, mind you. Demanded belly rubs. Did nothing to forward the plot.

Tonight’s Dinner: Roast Turkey

Yes, I am writing.

Roast turkey and mushroom, onion, sage and garlic stuffing. With a side of lima beans. Do not judge me. I LIKE lima beans.

Came home. Roasted the turkey. Made the stuffing. Took the lima beans out of the bag and boiled them.
